During storage of the beer in the dark depths of the storage cellar the carbon dioxide content is determined using its tongue and groove design. The beer matures in taste and becomes increasing clear, since the yeast settles on the base of the tank. The storage tanks in Hofbräuhaus Traunstein have a capacity well beyond 1 million litres. With an eight fold turnover the annual capacity of the storage area is over 5 million litres of beer.
