Hops

We brew exclusively with fine aromatic hops from the Hallertau region.
Our hop farmers, the Pichlmeyer family from Grafendorf, has been growing our preferred varieties for over thirty years on fields owned by the brewery, providing the “green gold“ so vital for shaping the character of our beers.

Malt

Our brewing malts are supplied by long-established Bavarian malthouses, using only fine Bavarian barley and roasted in a way that preserves aroma. The growing areas are largely on the Munich gravel plain, in the Upper Palatinate and in Lower Franconia.

Water

The water for our beer has always come from the brewery’s own spring on the Traunstein high mountain, which was tapped in the era of the Elector, i.e. over 400 years ago.Ever since then our water, whose superb properties make it ideal for beer brewing, has flowed directly into the brewery without the assistance of a pump thanks to the altitude difference

Yeast

We produce our own yeast of the very finest quality. Two yeast strains (bottom-fermented and top-fermented) are cultivated and propagated in our brewery.
